Superfoods are foods that are packed with naturally occurring nutrients and large doses of antioxidants, polyphenols, vitamins, and minerals. These foods have been shown to reduce the risk of chronic disease, improve brain power, help fight again aging and in general keep you healthy.


  • 1 bunch organic kale, remove center stem and cut into bit sizes
  • 2 tbsp olive oil
  • 1 cup cooked quinoa
  • 1 cup finely chopped carrots
  • 2 crispy apples, finely chopped
  • ½ cup cranberries (sulfite and sugar free)
  • ½ cup raw pumpkin seeds
  • 1 ripe avocado, pitted and cubed
  • Salt and pepper to taste

Tangy Dressing

  • 1 cup raw cashews
  • 1 cup filtered water
  • ¼ cup lemon or lime juice
  • 3 tbsp Dijon mustard
  • 2 tsp honey
  • 3 cloves garlic
  • Sea salt and pepper to taste



1. Dressing: Soak cashews in room temp. water for 1 hour. In a food processor or strong blender combine all the ingredients for the Tangy Dressing and blend until smooth.

2. Salad: Place kale into a large bowl and drizzle with olive oil and message the oil into the kale with your hands. Add the remaining ingredients into the bowl and toss. Add the Tangy Dressing and season with salt and pepper to taste
